I just baked this cake for the second time–it tastes delicious, but for some reason my cakes are coming out half the height of yours. I doubled the recipe and divided it evenly between three 8 inch cake pans and the rest I made cupcakes, so two cups of batter in each pan. Would love any thoughts on why this might be happening! The cakes taste delicious! Thanks so much,
Which recipe are you referring to? The Vanilla Coconut Jam cake? For that cake I usually bake it in 6 inch pans.
