Sweet Potatoes Au Gratin \\ Sweet Laurel

The month of February calls for some serious comfort food. This week I decided to share one of my all time favorite side dishes: Sweet Potato Au Gratin. It is quick and easy to prepare for a cozy dinner at home. At my house, we use Hannah or Japanese sweet potatoes regularly. They have white flesh, and can easily fool potato lovers. Feel free to use any variety of sweet potatoes. Enjoy!

Serves 4


 

Sweet Potato Gratin


 

4 medium sized white sweet potatoes, washed

2 medium shallots

2 cloves of garlic

2 cups almond or coconut milk

1/2 teaspoon cayenne

1/4 cup chopped chives

1 teaspoon Himalayan pink salt

Preheat oven to 375.

Slice sweet potatoes very thin. A mandolin works best. Layer in baking dish.

In a food processor, mix shallot, garlic, almond milk, cayenne, chives and salt.  Pour over potatoes and place in oven.

Bake for 40 minutes.  Turn oven to broil, and broil for 7 minutes.  Allow to cool. Enjoy!
