At Sweet Laurel, we like keep things whole, simple and pure. This mayo doubles as salad dressing, veggie dip, toast topper, you name! Enjoy this avo mayo as a condiment any day of week! I love it on a lettuce wrapped bison burger. Delish!
Yields for about 2 cups
3 ripe avocados
2/3 cup olive oil
1 tablespoon lemon juice
1 teaspoon salt
1 clove garlic
1 teaspoon turmeric
1 tablespoon coconut milk
Combine all ingredients in a blender. Mix until well incorporated. Store in fridge up to one week.
Do you have any idea how many calories this comes out to be per serving? It sounds delicious!!
Hi Dawn, I do not have the caloric info for our mayo. I know you can import the ingredients on http://www.caloriecount.com. Enjoy!!
That is an awesome website! So if there are three cups of this after it is made, there are about 50 calories per tablespoon; I would say 3 cups is a reasonable estimate until you actually make it and see what the final volume is (may vary each time).

Would it be ok if plain Greek yogurt was used in place of coconut milk?
Definitely! It may be a bit tangy, filled with super yummy probiotics. Enjoy!

HI Maggie! Almond milk or regular dairy milk will work just fine!
