Avocado Mayo
Yields for about 2 cups
3 ripe avocados
2/3 cup olive oil
1 tablespoon lemon juice
1 teaspoon salt
1 clove garlic
1 teaspoon turmeric
1 tablespoon coconut milk
Combine all ingredients in a blender. Mix until well incorporated. Store in fridge up to one week.

That is an awesome website! So if there are three cups of this after it is made, there are about 50 calories per tablespoon; I would say 3 cups is a reasonable estimate until you actually make it and see what the final volume is (may vary each time).
