Clementine Olive Oil Cake

This limited edition cake was such a hit; we knew we had to share the recipe with you! Lightly sweet, with a hint of citrus and oh so moist. This olive oil cake is elegant and delicious. Enjoy!


Yield: One 9″ round cake

Bake Time: 25 minutes


Ingredients:

3 cups almond flour

1/4 cup coconut flour

1 1/2 tsp baking soda

1 tsp pink salt

1/3 cup olive oil

(we prefer Enzo Organic Clementine Crush Olive Oil)

3/4 cup maple syrup

3 organic eggs

1/4 cup + 1 tbsp clementine juice

3 tbsp clementine zest

*coconut powdered sugar, organic flowers, leaves and citrus slices to garnish.


Directions:

Preheat oven to 350. Line 9″ pan with parchment paper and grease with 1 tablespoon of oil.

Whisk together dry ingredients in small bowl and set aside.

In another bowl, mix eggs, maple syrup, olive oil, zest and clementine juice. Add dry ingredients and stir. Add dry ingredients and keep stirring.

Pour batter into prepared pan and bake for 25 minutes. Remove from oven and allow to cool.

Sprinkle with coconut powdered sugar and decorate with citrus slices and leaves!
